چکیده

To explore the functional properties of mixed biopolymer systems affected by acid and salts. The effects of acid and salt solutions (i.e., NaCl, KCl and CaCl2) on the pasting, rheology, texture and microstructure of lotus root starch–konjac glucomannan (LRS/KGM) mixtures were assessed. Acid (citric acid buffer) treatment worsened the pasting (except for breakdown viscosity), rheological (except for fluid index), and textural properties, thereby inhibiting retrogradation, weakening pseudoplasticity and thickening, and reducing mixture viscoelasticity. Furthermore, it led to destructive ruptures and large pores in the internal microstructure. Salt treatment worsened the pasting properties (except for setback viscosity), thus inhibiting retrogradation and weakening pseudoplasticity, but enhanced the rheological properties, improving thickening and fluctuating viscoelasticity of the mixture. Moreover, salt addition decreased the hardness while increasing mixture cohesiveness, and modified the elasticity, adhesiveness and internal microstructure in a salt typeand concentration-dependent manner. A salt solution concentration of 0.5 mol/L NaCl, 0.1 mol/L KCl, and 0.5 mol/L CaCl2 led to the mixture with the best texture and gel network.

Microwave-assisted acid hydrolysis of konjac products for determining the konjac powder content.

The complete hydrolysis of konjac glucomannan (KGM) with an acid or enzyme generally takes a long time. To accelerate KGM hydrolysis without diminishing the conventional quality, a diluted acid hydrolysis of KGM with sulfuric acid was conducted using a microwave digestion system. The optimum conditions of microwave-assisted acid hydrolysis for KGM were: 10 mL of 0.25 M sulfuric acid, hydrolysis...

Effect of a small amount of sodium carbonate on konjac glucomannan-induced changes in thermal behavior of wheat starch.

The effects of konjac glucomannan (KGM) on thermal behavior of wheat starch have been studied in the presence of low concentrations of Na2CO3 (0.1-0.2 wt% of starch). Confocal laser scanning microscopy (CLSM) allows the visualization of the starch gelatinization process and granule remnants in starch pastes. Heating the starch dispersion in KGM-Na2CO3 solution significantly delays granule swell...

Rheological Properties of Mixtures of Spruce Galactoglucomannans and Konjac Glucomannan or Some Other Polysaccharides

Spruce galactoglucomannan is a wood-derived polysaccharide with a modest molar mass that has recently been made available in kg-scale for research and development of value-added products. To promote the application of spruce galactoglucomannans in, for example, food products, it is vital to understand also the rheological behaviour of the mixtures of galactoglucomannans with other polysaccharid...

Chemically modified konjac glucomannan with high colloid osmotic pressure: physiological evaluation in a rabbit model as a plasma substitute.

Carboxylmethylated konjac glucomannan (CKGM) is a carboxylmethylated polymer of mannose and glucose that is derived from the plant Amorphophallus konjac cultivated in East Asia. The CKGM solution had a high volume-expanding efficacy and was evaluated as a plasma substitute in the present study. Ameliorative hemorrhagic shock rabbits were used as the model animals. The in vivo hemodynamic and he...

Dilute Solution Viscometry Studies on a Therapeutic Mixture of Non-digestible Carbohydrates

Recent work has shown the beneficial effects of a proprietary mixture of three non-digestible carbohydrates: konjac glucomannan, xanthan and alginate and these effects have been linked with a synergistic interaction observable with analytical ultracentrifugation, rheological and NMR measurements. These observations have been supported by fundamental dilute solution viscosity studies. Preparatio...
